Our mission at Moonlight Oyster is simple:

At Moonlight Oyster, we believe good food should do good. That’s why we’re on a mission to make oysters — one of the most sustainable, nutrient-rich proteins on the planet — available to our local community at a price that’s fair and attainable.

Local oysters often get shipped out to tables and facilities far away — but Moonlight is different. By keeping our harvest local and prices fair, we aim to make this delicacy something the whole community can enjoy.

We’re not just farming oysters. We’re cultivating connection: to our waters, to our food, and to each other. Every oyster you enjoy supports clean water, healthy ecosystems, and the local food movement.

Aphrodite Oysters

Harvested from Marrowstone Island on the Olympic Peninsula, Aphrodite oysters have a delicate brine-forward flavor with a sweet, buttery, cucumber finish.  It actually is the same species of oyster that is produced all along the West Coast and in many other countries, the Pacific oyster. The mixture of the Strait of Juan de Fuca with the smaller inlets of Kilisut Harbor and Mystery Bay create a unique medley of phytoplankton that give Aphrodite her unique flavor.

I am proud to say that I run the oyster bar similar to how I run the oyster farm. Keep it fresh and simple is my motto. Fresh seafood from the Salish sea speaks for itself. I am honored to be an escort of this divine nutritious and local food. Oysters are served on the half shell in half dozen or dozens. The oysters are served with lemons, hot sauce, and a homemade vinegar mignonette.

My friend Cody at Wayland Constructive built the oyster bar (pictured here at Finnriver Cidery) out of a black walnut slab which creates that sense of place to arrive and bask in the wonder that is Oysters being shucked in front of you for you.
